Hear more from Richard in his own words in the video below: His dish, Slow Cooked Lamb with Minted Peas and Beans, lends itself perfectly to spring and summer produce as the ingredients give the dish a lightness, whilst the lamb provides an intense depth of flavour. For Richard, this dish combines the best of spring and summer and is the perfect transition from the winter months with its seasonal vegetables, robust lamb and hints of mint. The peas and broad beans signify the start of summer. In his opinion, food needs to inspire you and take you to another place.
