Introducing Henry Scott... Henry is Head Chef and Owner of Henry’s in Bath; a modern, independent restaurant, with a small, seasonal menu and tasting menu. Henry’s dish is chicken thigh with honey and mustard dressing paired with a warm, light potato salad. The dressing itself consists of two different mustards, stem ginger, honey, lemon zest and a dash of soy sauce. Initially Henry had proposed three dishes and after developing and creating the recipes in our kitchen, his Chicken Thigh was the strongest when it came to delivering on both depth of flavour and lightness. The stand-out flavours from his dressing are stem ginger and lemon. The ginger provides a sweetness without being overpowering whilst the lemon balances out any heat from the ginger, with a zesty kick that completely lifts the dish.
