Introducing Elliott Lidstone... Head Chef of BOX-E at Wapping Wharf, Bristol, Elliott has created a delicious Creamy Chicken, Pearl Barley and Cauliflower Risotto. Inspired by a similar dish he serves at his restaurant; he enjoys cooking with pearl barley due to its wonderfully creamy texture. In his opinion, this dish is filling enough for an evening meal or large lunch. It’s perfect for the Summer months as it’s plentiful without being too filling, light yet hearty and comforting at the same time. Hear more from Elliott in the video below... The dish incorporates a variety of interesting textures with the pickled cauliflower, which cuts through the creaminess of risotto, cauliflower purée and grainy pearl barley. After having tasted the final version of his dish Elliott was delighted with the flavours, which went above and beyond what he was expecting.
