25 January marks the annual celebration of the life and work of Scotland's national bard, Robert Burns. Every year people around the world mark the occasion with a Burns Supper. This traditionally includes ‘the piping in of the haggis’ by a bagpiper, reciting of poetry, including the 'Selkirk Grace' and the 'Address to a Haggis', and speeches and toasts known as the 'Immortal Memory', the 'Address to the Lassies' and of course 'The Reply from the Lassies', which are normally created especially for the evening.
The traditional menu for a Burns Supper would be a haggis, accompanied by mashed ‘neeps and tatties’, or turnips and potatoes in the vernacular.
