Phil's Festive Fare

Get festive with Phil this winter as our Head Chef takes us through his Christmas creations.

“I love the holiday period – the smells, colours, decorations and above all taste! It’s great to be able to settle down and enjoy some quality time with the family, and of course to cook for everyone en masse. Everyone enjoys a traditional Christmas dinner and my family is no exception, but it’s always hard to please everyone! That’s why we’ve included our Festive Pork Loin with chunky apple gravy, it’s a delicious juicy slice of goodness, finished off by both boiled and roast potatoes and a selection of seasonal vegetables. I think you’ll gobble down our Honey Roast Turkey Breast – a traditional, healthy meal with all the trimmings. My kids love all the extras, with roast and creamed potatoes, carrots, roasted parsnips and a crunchy apple and cranberry stuffing, they’re not so keen on the brussel sprouts though! Cranberries are a lovely tart flavour and really bring out something special in winter dishes and the Pork and Cranberry Lattices are no exception. They give a gourmet twist to an old favourite – I guarantee they’ll go down a storm, you’ll be amazed at the amount of “helpers” that will appear as you open that oven door! Round things off with our Mince Pies or Christmas Pudding, they’re packed with fruit and perfect with custard, cream, brandy butter... I could go on! I hope you enjoy the meals and they leave you feeling suitably festive. All that’s left is for me to wish you season’s greetings and a happy new year – look out for our exciting new products in our 2008 menu!
